Korean Kimchi Pancake (Kimchijeon)

Ingredients
  

  • 1 cup finely chopped kimchi
  • ½ cup all-purpose flour or Korean pancake mix
  • ¼ cup water
  • 1 tablespoon kimchi juice
  • 2 tablespoons cooking oil

Method
 

  1. Mix kimchi, flour, and water in a bowl until combined.
  2. Heat oil in a pan over medium-high heat.
  3. Pour one ladle of batter and spread it thinly in the pan.
  4. Cook for 3-4 minutes on each side until golden and crispy.
